Napa cabbage is the long, pale head behind classic kimchi: crinkly cream-green leaves, a wide juicy rib, and a sweeter, milder bite than round green cabbage. Raw it is tender and clean. Salted and fermented it turns silky and bright. Also called Chinese cabbage or pe-tsai.
