Kala namak, also called black salt or sulphur salt, is a volcanic rock salt with a distinctive sulphurous aroma and a soft, eggy note prized in Indian cooking. In the Alchemy kitchen we use it sparingly to deepen chaat, chutneys, tofu scrambles, and plant-based dishes that want a whisper of egg without dairy.
